Sodium alginate is a white to cream colored, fine powder that is produced by the reaction of sodium and alginic acid. It is used in many different products as a thickener, emulsifier, stabilizer, and gelling agent. Sodium alginate is most commonly used in the food industry for its use in gelling and stabilizing jams, jellies, fruit purees, dairy products, and beverages. It is also used in other industries like cosmetics, textiles, and plastics. Algin is a naturally occurring polysaccharide (polymer) made of a linear chain of sugar molecules, which are covalently bonded to one another. It is produced by some brown algae, and is a common seaweed component. Algin is used in many industries for a variety of purposes, including as a food additive, in biotechnology, as a thickening agent in cosmetics, and in biomedical research.
